Chicken Rice Recipe Ingredients
• 3 1/2 pounds chicken pieces
• 2 cups medium grain white rice
• 1 large onion, finely chopped
• 1 red bell pepper, finely chopped
• 1 green bell pepper, finely chopped
• 3 garlic cloves, minced (or 3 teaspoons minced garlic from a jar)
• 1 cup sliced or diced carrots
• 2 tablespoons olive oil
• 3 cups chicken broth
• salt and pepper to taste
Chicken Rice Recipe Directions
Rinse chicken and pat dry. Season chicken with salt and pepper.
Set aside.
Heat olive oil in a large skillet over medium-high heat. Place chicken
carefully in heated oil and brown all over. This usually takes
approximately 5 minutes on each side. Remove chicken from skillet and set
aside.
Add the onions, as well as the red and green bell peppers to the skillet and
saute until the onions are soft. Add the garlic and carrots to the onion
mixture. Stir while cooking until the carrots are soft.
Carefully pour in the chicken broth. Add the cooked chicken to the
broth, reduce heat, and simmer for 25 minutes while partially covered.
Season to taste at this point with salt and pepper.
Add the rice to the broth return to a simmer and lightly cover. Cook
until all the liquid is absorbed - about 25 additional minutes.
