Fried Rice Recipe

This easy fried rice recipe is an easy side dish you can make to accompany almost any kind of meat dish.  Fried rice is also a great way to use up any leftover rice you may have in your refrigerator.  You only need 2 cups of leftover rice to make a recipe for fried rice that serves 6 to 8 people.  If you only have a cup of rice, just adjust the fried rice recipe to serve a smaller number of people.

Fried Rice Recipe Ingredients

• 2 cups cooked, chilled white or brown rice
• 1 cup chopped yellow onion
• 1/3 cup thinly sliced scallions
• 1 1/2 cups peas and carrots
• 1 large egg, beaten
• 1 tablespoon vegetable oil
• 2 teaspoons rice wine (also called mirin)
• 1 tablespoon water
• 1 1/2 tablespoons soy sauce
• 1/8 teaspoon pepper

Fried Rice Recipe Directions

Stir together the rice wine, water, soy sauce, pepper and egg.  Set aside.

Heat the vegetable oil in a large skillet or wok on medium high heat.  Add the onions and scallions to the oil and saute until the onions are translucent.

Add chilled rice, peas and carrots.  Stir until just warmed.

Drizzle the egg/soy sauce mixture over the fried rice, stirring constantly.  Continue stirring until egg is cooked and the rice is completely heated.  This should take approximately 6 to 8 minutes.  Serve immediately.

In a separate bowl, stir together flour, cocoa, and baking powder.  Fold flour mixture into egg whites gradually. 

Spoon batter into cupcake liners until 1/2 full.  Bake for approximately 20 minutes or until a toothpick inserted in the center comes out clean.  Cool cupcakes completely in pan.
