Greek Rice Recipe

A Greek rice recipe can vary in many different ways.  This particular recipe use raisins, peas and sausages so it is a wonderful meal all on its own.  You can feed 2-3 for a meal out of this greek rice recipe or 4-5 people as a side dish.  If you finely chop the sausages, this is also wonderful used as a stuffing when roasting a turkey, chicken or duck.

Greek Rice Recipe Ingredients

• 1 cup uncooked white rice
• 2 pork sausages, sliced and uncooked
• 4 small mushrooms, thinly sliced
• 4 Roma tomatoes
• 4 leaves of green leaf lettuce
• 1/2 cup cooked peas
• 1 tablespoon diced pimento
• 2 tablespoons cooking raisins
• 3 tablespoons sweet butter plus a small amount for sautéing the raisins.
• 3/4 cup onion, chopped
• 1 garlic crushed clove
• 2 cups boiling chicken broth
• 1 teaspoon salt
• 1/4 teaspoon black pepper

Greek Rice Recipe Directions

Shred lettuce.

Peel, seed and finely dice the Roma tomatoes.

In a small saucepan, sauté the raisins in a small amount of butter until they are just turning soft.

In a large saucepan, melt 2 tablespoons of the butter and sauté the onion until it starts to turn brown.  Add the sausages, mushrooms, tomatoes, lettuce and garlic.  Add the rice to the mix and stir well.

Pour in the boiling chicken broth, salt and pepper.  Cover with a tight fitting lid and cook for 20 minutes over low heat.

Fluff with a fork and add the remaining 1 tablespoon butter, peas, pimento and raisins.
