Rice Ring Recipe With Mushrooms

I'm always looking for new ways to present the food I cook and this rice ring was a big hit at my family table and at several dinner parties.  You don't have to add the mushrooms, you can leave them out completely or substitute another vegetable of your choice.  My husband really likes it when I add onions to our rice rings - I've added them alone and combined with mushrooms.  It all depends on what I have available in my kitchen.  When my father in law comes to visit, I make sure I serve extra cooked mushrooms in the center of the ring.

Rice Ring Recipe

• 1 cup uncooked white rice
• 1 teaspoon salt
• 8 oz baby portobella mushrooms, rinsed and chopped
• 2 tablespoons butter
• 2 cups water
• 1/4 cup beef stock, warmed
• ground pepper to taste

Rice Ring Recipe Directions

Combine the water, salt, and uncooked rice in a medium saucepan that has a lid.  Bring to a boil over high heat.  Reduce heat to low and cover.  When the water is absorbed, remove rice from heat and set aside.  The rice should take approximately 15 minutes to cook.

Warm your oven to 350 degrees.

In a saute' pan, melt butter and add mushrooms.  Cook for 3 minutes or until the mushrooms are softened.

Pour the beef stock into the mushrooms and butter.  Stir in the cooked rice.

Grease a 7 inch ring mold and spoon the mushroom rice mixture evenly into the mold.

The mold should then be put in a baking pan containing hot water up to 1 inch.

Bake at 350 degrees for 30 minutes.

Carefully turn the mushroom rice ring onto a serving platter.
