Wild Rice Recipe

If the truth be told, wild rice is not truly a rice.  It is an aquatic grass seed that requires a long cooking time much like brown rice.  Most of the wild rice you see in grocery stores today are blends which make them much more affordable for wild rice recipes.

Wild Rice Recipe

To cook wild rice, you only need a basic wild rice recipe.

• 1 cup wild rice
• 2 1/2 cups chicken or vegetable broth

Wild Rice Recipe Directions

Place wild rice and broth in a medium size saucepan.  Over high heat, bring to boiling then reduce heat to low.  Cover tightly and cook for approximately 40  minutes or until the liquid is absorbed, and the rice is tender.

Remove from heat and let wild rice sit covered for 10 minutes before fluffing with a fork and serving.

 

Wild Rice Recipe 2

• 1 cup cooked wild rice
• 1 cup cooked brown rice
• 1/2 cup chopped onions
• 1 cup chopped broccoli
• 1 cup chopped yellow squash
• 1/2 cup thinly sliced carrots
• 1 1/2 tablespoons salted butter
• 2 teaspoons fresh squeezed lemon juice
• 1/4 teaspoon salt

Wild Rice Recipe Directions

Melt the butter in a large skillet over medium heat.  Add the onions and cook until transparent.  Add the broccoli, squash and carrots to the onions and butter.  Cook with stirring 5 -6 minutes.

Using tongs or a slotted spoon, remove the vegetables from the skillet and place in a pre-warmed bowl.

Add the lemon juice to the skillet and stir with a flat wooden spatula to deglaze the pan.  Add the wild rice, brown rice and salt to the skillet.  Stir well then add the cooked vegetables to the skillet.  Continue cooking and stirring until the rice and vegetables are heated completely.
